STORAGE

Dough dries out 
Seal dough completely after use and during storage to prevent over exposure to air.

Dough is sticking to wax paper in box
Remove bag from box, drop onto hard table to loosen frozen dough portions.

can be stored frozen for one year or refrigerated for 90 days.

BAKING

IF THIS HAPPENS:

Cookies too dry Over baking. Check cookies before end of baking time.

Cookies too oily Oven temperature to low. Check oven temperature with separate thermometer.

Cookies spread too much Baking pan. Use unglazed non-Teflon pan. Do not grease pan.

Cookies do not spread Baking pan. Use non-perforated pan.
Baking time. Bake cookies longer.
Oven temperature. Check with thermometer.

Cookies bump into each other during baking.

Not enough space between cookies. Allow 2” between 0.54-2oz and 3” between 2.5-4oz. Cookies.

Uneven baking Oven temperature. Use separate oven thermometer.
Oven heat uneven. Turn baking pan halfway through baking time.
Baking pan touching side of oven. Allow 2” space around baking pan.

Cookies stick to sheet Ingredients such as raisins or candies stick to pan.

Loosen cookies from pan carefully with spatula.


Cookies to brown Oven to hot. Use separate oven thermometer.
Check cookies before end of baking.
Allow 2” space around pan for proper baking.
Over baked.
Baking pan touching side of oven.

Over brown bottoms Oven too hot. Use separate thermometer.
Baking sheet on bottom shelf
of oven.
Place baking pan in the center of oven.

Cookies break /crumble as they are taken
from baking sheet.
Left on baking pan too long and
become dry and firm.
Let cookies cool on baking pan for 20 minutes, then remove and display in cookie dispenser or package.

*  It is quite common for the temperature of an oven to be out as much as 50oF.

Helpful Baking Hint for dark chocolate doughs: place a light dough cookie (such as chocolate chip) on the baking pan
with the dark cookie so that you can easily determine when the cookies are completely baked.
